I absolutely love fresh salmon, but it’s just too darn expensive to eat very often. Really, I love salmon in any form because of its delicious, fatty flavor. My favorite way to eat canned fish would definitely be in the form of salmon patties. Fresh salmon would work for these too, but why ruin a nice piece of fish?
Drain and remove the skin and *bones:
1 can salmon
Put the salmon in a bowl and break it into larger chunks. Add to the bowl:
1/4 c. oatmeal
2 eggs
desired seasonings (I love seasoned salt!)
Mix well and form into 4 patties.
Melt 1 T. butter in a frying pan over medium-high heat. Add the salmon patties and cook until they are browned, turning once.
Serve with rice. My brothers and sisters love them smeared with ketchup, but I don’t like ketchup. I like them with hot sauce!
To cook rice in the Instant Pot, I use 3 c. rice, 4 1/2 c. water, 5 minutes at high pressure, and quick release.

*You don’t actually have to remove the bones since they are very soft. I’ve eaten these patties both ways. See what you like best.


Salmon Patties (Salmon Cakes)
Ingredients
- 1 can salmon
- 1/4 cup rolled oats
- 2 eggs
- 1/2 teaspoon seasoned salt
- 1 tablespoon butter
Instructions

- Heat a skillet with the butter. Form the salmon into 4 patties and cook until they are browned on both sides, turning once.1 tablespoon butter
- Serve with ketchup, hot sauce, and whatever side you want. We like rice.
