Impossible peanut butter cookies are my favorite peanut butter cookies in the world because they actually taste like peanut butter once they’re cooked! It also helps that they’re incredibly easy. 😉 Ever since making these 20+ years ago, I’ve never bothered making any other peanut butter cookie recipe. I also like the texture of these a lot better. Rather than being hard or chewy, they’re delicate and a little crumbly with a strong peanut butter flavor. Yum!
Preheat the oven to 350. Beat all ingredients together until fluffy:
1 c. peanut butter
1 c. sugar
1 egg
Drop by tablespoon-fulls onto a cookie sheet and press flat with a fork. Bake at 350 for 8 minutes. Leave the cookies to cool on the cookie sheet because they are too gooey to get off while they’re still hot.
Variations
Impossible Chocolate Chip Peanut Butter Cookies
Add some melty goodness! Stir in 1/2 c. of chocolate chips when you mix the other ingredients together.
Impossible Dark Chocolate Peanut Butter Cookies
Follow the same directions, but add 1/2 c. cocoa powder and enough water to bring the dough together. You’ll likely need a few tablespoons of water since the cocoa is so dry. It doesn’t matter if you use natural or Dutch process cocoa.

- 1 cup sugar
- 1 egg

- Preheat the oven to 350 and prepare a cookie sheet.
