This cilantro lime rice is a lot like the kind from Cafe Rio, but better. I don’t care for parboiled rice. Regular rice has a much better texture to it. Make sure to use white rice. Brown rice just isn’t the same with this recipe.
Add all ingredients to the Instant Pot and cook at high pressure for 5 minutes, then quick release.
4 T. butter
2 c. uncooked rice
3 c. chicken broth
1/2 t. salt
juice of 1 lime (about 2 T.)
1/4 c. chopped cilantro
1/2 t. cumin
I have also made this on the stovetop, but it takes a lot more broth and time. Serve the cilantro lime rice with chiles rellenos or another Mexican dish.
Rice is the very first thing I cooked in the Instant Pot, and I was immediately hooked. I live at a high altitude and often had to cook rice for a long time, especially when it had things added to it (as with this recipe). Now, cooking rice is simple, and the texture is so much better than it was when I cooked it on the stovetop. I honestly don’t know what I would do without my pressure cooker! I use it more than any other appliance.

- 1/4 cup butter 1/2 stick
- 2 cups rice
- 3 cups chicken broth I use powder and water.
- 1/2 teaspoon salt
- 2 tablespoons lime juice fresh, from 1 lime
- 1/4 cup cilantro chopped
- 1/2 teaspoon cumin
Instructions
