Imagine crispy crust, spicy peanut sauce, and crunchy vegetables all in one meal. Add in some garlic chicken for a delicious, though unconventional, Thai pizza.
Preheat the oven to 400 and spray a large pizza pan.
Crust
Add to a mixing bowl:
2 t. yeast
2 t. sugar
1 1/4 c. water
1 t. salt
Stir until combined, then add
3 c. flour
Mix until the dough comes together and is stretchy, not sticky. Add a little more water or flour if needed to get the right texture. Set the dough aside for now. It is much easier to shape when it’s had at least 10 minutes to rest.
Peanut Sauce
Blend together until smooth:
1/4 c. peanut butter
2 T. soy sauce
1/4 c. honey
1/4 c. pickled jalapenos
2 cloves garlic
If you’d rather used bottled peanut sauce, I recommend the House of Tsang brand.
Chicken
Heat a frying pan until it’s very hot, then add the following and stir fry until done:
12 oz. chicken, chopped into bite-sized pieces
1/4 t. garlic powder
Veggies
Prepare the following and set aside until you are ready to assemble the pizza:
4 c. red cabbage, shredded
2 carrots, grated
Assembling the Pizza
Roll out pizza crust onto desired pizza pan. Spread the peanut sauce over the crust. Next, top with the chicken and vegetables.
Bake the Thai pizza at 400 for 15-20 minutes, or until the crust is slightly toasted.
