There was a time that I couldn’t eat dairy products without feeling super yucky. Though that is no longer true, I still love eating this quick and easy potato soup for lunch. I did not originally have a high-speed blender, but now that I do, this soup is even easier to make. I think the spices and level of creaminess are perfect. Since it is fairly light compared to other potato soups, you can either eat a lot of it or treat it as a side. I prefer the former option!
