On a hot summer day, it’s nice to drink something cool and refreshing. Since our air conditioner stays off at night, that means some mornings are a little muggy and gross in our house. This peanut butter cookie smoothie is perfect if you love a sweet, cold, and refreshing breakfast. It tastes like dessert but is very healthy!
There are several options for blending. A food processor gives a great texture because the oats don’t get ground up all the way. If you have a high-speed blender, add the oats in last and pulse a few times to keep some texture.
Blend until (mostly) smooth:
2 frozen bananas
2 T. peanut butter
1/4 c. oats
1/2 c. unsweetened almond milk (Water works too.)
If you’d like a smaller peanut butter cookie smoothie, use 1 1/2 bananas and 1 1/2 T. peanut butter instead. This will decrease the calorie count by 100.
