Peanut Butter Cookie Smoothie

On a hot summer day, it’s nice to drink something cool and refreshing. Since our air conditioner stays off at night, that means some mornings are a little muggy and gross in our house. This peanut butter cookie smoothie is perfect if you love a sweet, cold, and refreshing breakfast. It tastes like dessert but is very healthy! The recipe makes enough for a full meal for 1 person. Or, you can share and make it go further.

There are several options for blending. A food processor gives a great texture because the oats don’t get ground up all the way. If you have a high-speed blender, add the oats in last and pulse a few times to keep some texture.

Blend until (mostly) smooth:

2 frozen bananas

2 T. peanut butter

1/4 c. oats

1/2 c. unsweetened almond milk (Water works too.)

Enjoy your peanut butter cookie smoothie right away for best results. If you’re not looking to make it your entire meal, share it with your kids. They’ll be wanting some anyway. Mine can hear the blender from a mile away and always assume it’s something delicious. They’ve often been disappointed when I’ve been making a sauce for dinner or something else savory.

Ingredients
  

  • 2 bananas frozen
  • 2 tablespoons peanut butter
  • 1/4 cup rolled oats
  • 1/2 cup almond milk unsweetened, plain

Instructions
 

  • Blend all the ingredients until almost smooth. If using a high speed blender, add the oats last and pulse a few times to keep some texture.
