Instant Pot German Stew With Sauerkraut

I wasn’t sure what to think about this combination of flavors, but it’s amazing! It isn’t very often that I find a 5-ingredient combination that I’ve never tried. It sounds like a lot of sauerkraut, but the flavor really mellows as the German stew cooks together.

(It surprises me that I like sauerkraut. I’ve never liked regular pickles, but I’ve always liked their flavor in chip form. Sauerkraut has more texture than cucumbers when pickled/fermented, so maybe that’s it. Also, I don’t find the smell as obnoxious as when I was a kid.)

Heat the Instant Pot on saute until it says “hot” and stir occasionally until starting to brown:

14 oz. kielbasa, sliced (1 package)

1 onion, chopped

Add to the pot and stir to scrape the bottom (deglazing):

1 1/2 c. water

Add the remaining ingredients to the pot:

1 lb. potatoes, peeled and diced (Any kind will work. Reds and yellows will hold their shape better if that’s what you want.)

14.5 oz can diced tomatoes

1 can sauerkraut

Cook at high pressure for 9 minutes, then quick release. Top with sour cream for even more deliciousness.
