Sausage, Egg, and Cheese Muffins

These sausage, egg, and cheese muffins come together pretty fast and are pretty easy as long as you have everything prepped beforehand.

Preheat the oven to broil and set the top rack close to the broiler. Also preheat the Foreman grill or panini press if you’re making sausage patties from a roll of sausage. (The frozen, precooked patties would work great here too and save a step.)

Split and toast under the broiler until slightly brown:

8 English muffins

Set the muffins aside for now. Form into 8 small patties:

1 lb. ground sausage

Start cooking the sausage on the Foreman/panini press and whisk together in a bowl:

8 eggs

Cook the eggs 4 at a time in a pan. I heated the pan until hot, added a teaspoon of oil and swirled it around, and cooked the eggs like an omelet, turning off the burner once I had flipped it but not folding it over. Set the eggs on a plate and cut them into quarters. Repeat with the other 4 eggs. Or, just scramble all 8 eggs together.

By now, the sausage patties are probably done, so set them aside. Place on each English muffin:

1 slice American cheese (on top of the eggs)

sausage (on the other side)

Put the muffins under the broiler until the cheese melts. Put the halves together and enjoy. I have also made sausage, egg, and cheese muffins with turkey sausage, and they were delicious and not quite as greasy.

  • 1 pound ground breakfast sausage or 8 precooked patties
  • 8 eggs
  • 8 slices American cheese

  • Preheat the oven to broil. Also preheat the Foreman grill, griddle, or panini press.
  • Split and toast the English muffins under the broiler until slightly brown. Set aside.

  • Form the sausage into 8 patties and cook on the grill, griddle, or press. Or, use precooked patties and heat through.

  • Assemble the muffins with egg (folded if needed) and cheese on one side and sausage on the other. Return them to the broiler until the cheese melts. Put the halves together and enjoy.
