I remember my dad making this by boiling a can of sweetened condensed milk in a pot on the stove. I always worried that the can was going to explode and cover our house in a sticky mess, but that never happened. All the same, this updated way of making dulce de leche is awesome because it uses the Instant Pot, which is faster, and a bowl, which is safer. Note: the end of the recipe calls for an immersion blender to make the texture smooth. I don’t have one of those, but my food processor did an excellent job.
