Instant Pot Creamy Chicken and Rice

I never get tired of creamy chicken and rice combinations, especially when they’re this easy. All 5 kids loved it, and that’s a pretty rare thing. My pickiest child has requested this for his birthday. I feel like I’ve accomplished a great thing. 🙂

Heat the Instant Pot on saute and cook until starting to soften:

1 T. butter

1 onion, diced

Add and stir until the chicken is partly cooked through, about 2-3 minutes:

1 1/2 lbs. chicken breast or thighs, bite-sized pieces (Chicken breast tends to overcook under pressure, so I’ve switched to using thighs whenever I can. They stay tender.)

3 cloves garlic

Add the following ingredients, put the lid on the pot, and cook at high pressure for 5 minutes with a quick release:

2 t. Italian seasoning

1/2 t. pepper

1 t. salt

3 c. rice

4 1/2 c. chicken broth (I use water and powder, but homemade would be delicious too.)

When the pressure has released, open the pot and stir in the following:

3/4 c. heavy cream

3/4 c. Parmesan cheese (Any form will do. They will all melt into the rice and taste delicious.)

Serve creamy chicken and rice with a side of broccoli, spinach, or another favorite vegetable.

Ingredients
  

  • 1 tablespoon butter
  • 1 onion diced
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, bite-sized pieces
  • 3 cloves garlic minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 3 cups rice
  • 4 1/2 cups chicken broth
  • 3/4 cup heavy cream
  • 3/4 cup Parmesan cheese

Instructions
 

  • Heat the pressure cooker on "Saute" mode and cook the onion in butter until it starts to soften.

  • Add the garlic and chicken and stir until the meat is partially cooked, about 2-3 minutes.
    1 1/2 pounds boneless, skinless chicken, 3 cloves garlic
  • Add the seasonings, rice, and broth. Cook at high pressure for 5 minutes with a quick release.
    2 teaspoons Italian seasoning, 1/2 teaspoon pepper, 1 teaspoon salt, 3 cups rice, 4 1/2 cups chicken broth
  • Stir the cream and Parmesan into the cooked chicken and rice. Serve with your favorite veggie.
    3/4 cup heavy cream, 3/4 cup Parmesan cheese

  1. Yummy, this looks like a good one! I’m going to try it! I snuck some cauliflower rice into a casserole I made yesterday and nobody even noticed haha…..winning! Love it when I can find a recipe everyone likes…makes dinner more enjoyable! Thanks for sharing!
