I never get tired of creamy chicken and rice combinations, especially when they’re this easy. All 5 kids loved it, and that’s a pretty rare thing. My pickiest child has requested this for his birthday. I feel like I’ve accomplished a great thing. 🙂
Heat the Instant Pot on saute and cook until starting to soften:
1 T. butter
1 onion, diced
Add and stir until the chicken is partly cooked through, about 2-3 minutes:
1 1/2 lbs. chicken breast or thighs, bite-sized pieces (Chicken breast tends to overcook under pressure, so I’ve switched to using thighs whenever I can. They stay tender.)
3 cloves garlic
Add the following ingredients, put the lid on the pot, and cook at high pressure for 5 minutes with a quick release:
2 t. Italian seasoning
1/2 t. pepper
1 t. salt
3 c. rice
4 1/2 c. chicken broth (I use water and powder, but homemade would be delicious too.)
When the pressure has released, open the pot and stir in the following:
3/4 c. heavy cream
3/4 c. Parmesan cheese (Any form will do. They will all melt into the rice and taste delicious.)
Serve creamy chicken and rice with a side of broccoli, spinach, or another favorite vegetable.

- 3/4 cup heavy cream

Instructions
