If you want a fancier breakfast that’s also perfect for dinner, try these air fryer breakfast empanadas! They remind me of the Toaster Scrambles my mom used to buy when I was in high school, but better.
If you plan on using the oven, preheat it to 400 now.
The Crust
Start with 2 pie crusts, or make your own by mixing all of the following together in a bowl:
2 c. flour
2/3 c. oil
1/3 c. water
1 t. salt
The Filling
Cut up small, cook, and drain:
6 oz. bacon (1/2 of a regular package)
Scramble in a pan:
8 eggs
Mix all together:
the cooked bacon
the scrambled eggs
1/4 c. salsa
Assembling the Empanadas
Divide the pie crust into 8 pieces. Roll each piece between pieces of plastic wrap. Spoon 1/8 of the filling onto the circle, then top with 1 piece of American cheese or 2/3 oz. (about 2 T.) of shredded Cheddar cheese. Fold the crust over and crimp with a fork to seal it. (The American cheese gives a gooier texture, while the Cheddar cheese has a stronger flavor. Your choice. I prefer American in certain recipes, and this is one of them.)
Cook the empanadas in the air fryer for 10-12 minutes at 400 degrees or in the oven for 20-25 minutes, also at 400.
Serve breakfast empanadas with a side of veggies or fruit. You could also serve them with additional salsa.
