Flourless Chocolate Cake With Ganache

I was looking for some new cake recipes, specifically chocolate, when I found this one. I’m not sure I’ve ever eaten a richer cake, but that’s not a bad thing! This flourless chocolate cake tastes like a truffle in cake form.

The Cake

Preheat the oven to 375 and grease an 8 X 8 pan.

Melt and stir together:

1 c. chocolate chips

1/2 c. butter

Add the mixture to a mixing bowl and beat until smooth:

3/4 c. sugar

1 t. vanilla

Add one at a time, beating until smooth:

3 eggs

Add and stir until just combined:

1/2 c. cocoa powder

Pour the batter into the prepared 8 X 8 pan and bake at 375 for 25 minutes. The edges will look cracked, but the middle will still be a little jiggly. Allow the cake to cool before topping with the ganache (recipe follows).

The Ganache Topping

Heat until small bubbles form, either on the stove or in the microwave:

1/2 c. heavy cream

Add and let sit for 5 minutes, then stir together until smooth and glossy:

1 c. chocolate chips

When the cake is cool, spread the ganache over the top. Let the ganache set for a few hours before serving. Enjoy flourless chocolate cake with vanilla ice cream or just by itself!

  • Add the chocolate chips to the hot cream and let it sit for 5 minutes. Stir until smooth and glossy.

  • When the cake is cool, spread the ganache over the top. Let the ganache set for a few hours before serving.
