I don’t like most pasta salads, but BLT tortellini salad is an exception. It’s a meal in itself and very easy to prepare. It’s also a fun way to re-imagine the classic BLT sandwich.
Cut into small pieces and cook until crisp:
6 slices of bacon
Set aside and reserve the drippings.
Cook until tender, drain, and cool:
20 oz. tortellini (a typical bag size)
Make the dressing by mixing together in a bowl:
1/2 c. mayo
1/4 c. sour cream
1 T. apple cider vinegar
1 t. sugar
1/2 t. salt
1/2 t. pepper
1 T. reserved bacon drippings
Toss the dressing with all of the following:
the cooled tortelleni
3/4 pint cherry or grape tomatoes, halved
Right before serving, mix with
10 oz. chopped lettuce
Top and serve:
the remaining halved tomatoes
the bacon pieces
chopped chives or green onions (optional)
Enjoy BLT tortellini salad on its own or as a picnic side. It’s sure to be a crowd-pleaser!

Random note: Did you know that blog posts get penalized if they’re “too short”? This one technically is. That’s why so many recipes get long back stories: it’s so the search engines can find the page better. I had no idea of this before, but it makes sense. I sometimes like reading those stories, but I also like the “skip to recipe” button at the top.
