I don’t like most pasta salads, but BLT tortellini salad is an exception. It’s a meal in itself and very easy to prepare. It’s also a fun way to re-imagine the classic BLT sandwich.
Cut into small pieces and cook until crisp:
6 slices of bacon
Set aside and reserve the drippings.
Cook until tender, drain, and cool:
20 oz. tortellini (a typical bag size)
Make the dressing by mixing together in a bowl:
1/2 c. mayo
1/4 c. sour cream
1 T. apple cider vinegar
1 t. sugar
1/2 t. salt
1/2 t. pepper
1 T. reserved bacon drippings
Toss the dressing with all of the following:
the cooled tortelleni
3/4 pint cherry or grape tomatoes, halved
Right before serving, mix with
10 oz. chopped lettuce
Top and serve:
the remaining halved tomatoes
the bacon pieces
chopped chives or green onions (optional)

BLT Tortellini Salad With Homemade Dressing
Ingredients
- 6 ounces bacon 1/2 package
- 20 ounces tortellini
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon bacon drippings
- 1 pint cherry or grape tomatoes halved
- 10 ounces lettuce chopped
- green onions chopped
Instructions
