BLT Tortellini Salad (Homemade Dressing)

I don’t like most pasta salads, but BLT tortellini salad is an exception. It’s a meal in itself and very easy to prepare. It’s also a fun way to re-imagine the classic BLT sandwich.

Cut into small pieces and cook until crisp:

6 slices of bacon

Set aside and reserve the drippings.

Cook until tender, drain, and cool:

20 oz. tortellini (a typical bag size)

Make the dressing by mixing together in a bowl:

1/2 c. mayo

1/4 c. sour cream

1 T. apple cider vinegar

1 t. sugar

1/2 t. salt

1/2 t. pepper

1 T. reserved bacon drippings

Toss the dressing with all of the following:

the cooled tortelleni

3/4 pint cherry or grape tomatoes, halved

Right before serving, mix with

10 oz. chopped lettuce

Top and serve:

the remaining halved tomatoes

the bacon pieces

chopped chives or green onions (optional)

Ingredients
  

  • 6 ounces bacon 1/2 package
  • 20 ounces tortellini
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon bacon drippings
  • 1 pint cherry or grape tomatoes halved
  • 10 ounces lettuce chopped
  • green onions chopped

Instructions
 

  • Cut the bacon into small pieces, cook until crisp, drain, and reserve the drippings.

  • Cook the tortellini according to package directions, drain, and let cool.
    20 ounces tortellini
  • In a small bowl, mix the dressing ingredients together.
    1/2 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon apple cider vinegar, 1 teaspoon sugar, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1 tablespoon bacon drippings
  • Toss the dressing with the cooled tortellini and 3/4 of the tomatoes.
    1 pint cherry or grape tomatoes
  • Right before serving, mix with the lettuce. Top with the remaining tomatoes, bacon pieces, and chopped green onions (optional).
    10 ounces lettuce, green onions
