My sister recently gave me a poster for my birthday that has 100 delicious, international dishes on it. Since I’d only tried half of them, I set out to try the rest. I’m happy to say that the first dish was a success! Though I’d tried avocado toast in the past, I hadn’t tried it exactly like this recipe.
Mash together in a bowl:
2 small avocados
2 oz. Feta cheese
1 t. fresh (or bottled) lemon juice
salt to taste
Set aside.
Make 4 eggs in your favorite style. My husband poached eggs in milk till they were mostly done in the middle. I like yolks that are just barely set and still dark yellow, but NOT runny.
Meanwhile, toast to your liking:
4 slices rye bread
Spread a thick layer of the avocado mixture on the toast, then top with an egg. Season to taste with salt and pepper. Though avocado toast sounds a little odd if you’re not a Millennial, it’s one of the quickest, most satisfying meals.
Another delicious twist: add some cooked, crumbled bacon on top instead of (or in addition to) the egg. All of my kids liked this recipe except for one, so I’d definitely call it a win.

- 2 avocados small
- 2 ounces Feta cheese
- 1 teaspoon lemon juice fresh preferred
- salt
- 4 eggs
- 4 slices rye bread
Instructions
