If you’ve ever been intimidated by the biscuit-making process, try these cheesy drop biscuits. Unlike biscuits with solid fats, you won’t have to roll or cut them out.
Preheat the oven to 450 and grease or line a baking sheet.
Combine all the dry ingredients in a medium bowl:
2 c. flour
2 t. baking powder
1 t. salt
1/4 t. baking soda
1/4 t. garlic powder
1 c. shredded Cheddar cheese
1/4 c. grated Parmesan cheese
Stir in the wet ingredients until just combined:
2/3 c. buttermilk (If you don’t have buttermilk, you can use one of the substitutes listed in this article. I most often use milk and lemon juice.)
1/3 c. oil
Drop the batter by tablespoons-full on to the baking sheet. Bake at 450 for 10-12 minutes, or until the biscuits are golden brown. Enjoy cheesy drop biscuits with butter, ham, or even gravy.
I love how easy this recipe is. My kids made it with very little supervision and did a great job. Now if I can just get them to clean up the mess in the kitchen, that would be nice. Dishes are the worst part of cooking!
