Gourmet Vegetarian Pizza

Gourmet vegetarian pizza is another one of my favorites from Papa Murphy’s. It was also really easy to recreate, and most of my family loved it despite “all those vegetables.”

The Crust

Mix all of the following ingredients together and let it rest for at least 10 minutes.

1 t. yeast

1 t. sugar

3/4 c. water

1/2 t. salt

1 1/2 c. flour

The Artichokes and Sauce

If you have plain artichokes, marinate them for 30 minutes:

1/2 can artichokes, chopped

1/4 c. white wine vinegar

1/2 t. Italian seasoning

Or, marinate the whole can and save half for another time.

Mix the sauce ingredients together in a bowl:

1/2 c. ranch dressing

1 1/2 t. minced garlic

The Veggies and Assembly

Preheat the oven to 400.

Stretch the dough out onto a large (16″) pizza pan, being careful not to tear it. Spread the garlic sauce over the dough.

Add the cheeses and veggies to the pizza:

1 1/4 c. shredded mozzarella cheese

1 1/4 c. shredded cheddar cheese

a small zucchini, thinly sliced

8 ounces mushrooms, sliced

1 Roma tomato, chopped

3 green onions, chopped

Sprinkle Italian seasoning over the top. Bake your delicious, gourmet vegetarian pizza at 400 for 20 minutes.

  • 16" pizza pan or 2 12" pans

Ingredients
  

The Crust

  • 1 teaspoon yeast
  • 1 teaspoon sugar
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1 1/2 cups flour

The Artichokes and Sauce

  • 1/2 can artichokes
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 teaspoons garlic minced
  • 1/2 cup ranch dressing

The Veggies and Assembly

  • 1 1/4 cups mozzarella shredded
  • 1 1/4 cups cheddar shredded
  • 1 zucchini thinly sliced
  • 8 ounces mushrooms sliced
  • 1 Roma tomato chopped
  • 3 green onions sliced
  • Italian seasoning

Instructions
 

The Crust

  • Mix the dough ingredients together and let it rest for at least 10 minutes.
    1 teaspoon yeast, 1 teaspoon sugar, 3/4 cup water, 1/2 teaspoon salt, 1 1/2 cups flour

The Artichokes and Sauce

  • Chop and marinate the artichoke hearts for 30 minutes.
    1/2 can artichokes, 1/4 cup white wine vinegar, 1/2 teaspoon Italian seasoning
  • Mix the sauce ingredients together in a bowl.
    1/2 cup ranch dressing, 1 1/2 teaspoons garlic

The Veggies and Assembly

  • Preheat the oven to 400.
  • Stretch the crust onto the pizza pan. Spread the garlic sauce on it.
  • Add the cheeses and veggies.
    1 1/4 cups mozzarella, 1 1/4 cups cheddar, 1 zucchini, 8 ounces mushrooms, 3 green onions, 1 Roma tomato
  • Sprinkle Italian seasoning over the top. Bake the pizza at 400 for 20 minutes.
