German Chocolate Cake (But Darker)

Real German chocolate cake has a mild chocolate flavor and uses German’s sweet chocolate. I prefer cocoa powder in my baked goods 100% of the time, so I changed this recipe to make it more chocolaty. My frosting is also a bit different since it uses all brown sugar instead of white or a mix. I kept it simple by not doing layers either.

The Cake

Preheat the oven to 350 and grease a 9×13 pan. Mix all of the cake ingredients together in a bowl until well-combined:

2 1/4 c. flour

1 1/2 c. sugar

1/2 c. oil

1 1/2 c. water

1/3 c. cocoa

1 1/2 T. vinegar

1 1/2 t. baking soda

3/4 t. salt

1 t. vanilla

Pour the batter into the prepared pan and bake the cake at 350 for 35-40 minutes. Set it aside to cool and make the frosting.

The Frosting

In a saucepan, heat together over medium, whisking until thickened:

1/2 c. butter

1 c. brown sugar

3 egg yolks

8 oz. evaporated milk

Remove from the heat and stir in the remaining ingredients:

1 t. vanilla

2 c. flaked coconut

1 c. chopped pecans

Pour the frosting over the cooled cake. German chocolate cake needs no accompaniment, but if you insist on ice cream, vanilla will do nicely.
