Oreo Cake With White Chocolate Ganache

My son wanted an Oreo cake for his birthday with a chocolate base. Rather than try a new recipe, I decided to use my trusty wacky cake recipe and add a little to it to make it divine. This recipe is the result. It’s not as tall as a typical cake, but it’s richer, so it doesn’t need to be.

The Cake

Preheat the oven to 350 and grease a 9×13 pan. Whisk all the cake ingredients together in a medium bowl.

1 1/2 c. flour

1 c. sugar

1/3 c. oil

1 c. water

1/4 c. cocoa

1 T. vinegar

1 t. baking soda

1/2 t. salt

1 t. vanilla

Stir into the batter:

18 Oreos, crushed

Pour the batter into the prepared pan and bake at 350 for about 30 minutes.

The White Chocolate Ganache

Warm in the microwave for 30 – 45 seconds, until a few bubbles form:

1/4 c. cream

Add to the cream and let sit for a few minutes, until melted:

4 oz. *white chocolate, chopped

Whisk until smooth.

*Make sure to use a good quality white chocolate here. The baking chips don’t usually say “chocolate” on the package. I bought a white chocolate baking bar, and it was well worth the extra cost. It should look yellow when melted due to the cocoa butter.

Topping

While the cake is warm, drizzle the white chocolate ganache. Sprinkle over the top just before serving:

6 Oreos, crushed

I highly recommend eating Oreo cake while it’s warm. Or, reheat for 15 seconds in the microwave. It’s rich, chocolaty, and divine on its own or with some vanilla ice cream.

  • Heat the cream in the microwave for 30 – 45 seconds, until bubbles form.

  • Add the white chocolate and let it sit for few minutes to melt. Whisk until smooth.
    4 ounces white chocolate
  • Drizzle the ganache over the warm cake.
  • Add the crushed Oreos just before serving.
