Chocolate Chip Zucchini Cake

After a bumper crop of zucchini last year, I was really glad to get this recipe from my friend Taylor. Chocolate chip zucchini cake has everything a good cake needs: chocolate, a hint of cinnamon, nuts, and a vegetable so I can pretend it’s healthy. My family also appreciates that it doesn’t have frosting.

Preheat the oven to 350 and grease a 9×13 pan.

The Cake

There are no special instructions for mixing this cake. Just mix everything together.

1 3/4 c. sugar

2 1/2 c. flour

1/4 c. cocoa

2 t. cinnamon

1/2 – 1 t. baking soda (Less for high altitude, regular amount for sea level.)

1/2 – 1 t. baking powder (Less for high altitude, regular amount for sea level.)

1 t. salt

1 c. oil

1/2 c. milk

2 eggs

1 t. vanilla

2 c. shredded zucchini

Prepare the topping before you put the batter in the pan.

The Topping

Mix together in a medium bowl:

1 c. chocolate chips

3/4 c. chopped nuts (like walnuts or pecans)

3/4 c. brown sugar

Put half of the topping in the batter and mix until combined. Pour the batter into the prepared pan. Sprinkle the rest of the topping on the batter. Bake the cake at 350 for 35 – 40 minutes.

Enjoy chocolate chip zucchini cake alone or with some cream or ice cream. I like cake by itself, but maybe I’m just weird.

  • 1 3/4 cups sugar
  • 2 1/2 cups flour
  • 1/4 cup cocoa
  • 2 teaspoons cinnamon
  • 1/2 – 1 teaspoon baking soda less for high altitude, regular amount for sea level
  • 1/2 – 1 teaspoon baking powder less for high altitude, regular amount for sea level
  • 1 teaspoon salt
  • 1 cup oil
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups zucchini, shredded
  • 1 cup chocolate chips
  • 3/4 cup chopped nuts pecans or walnuts
  • 3/4 cup brown sugar

Instructions
 

  • Preheat the oven to 350 and grease a 9×13 pan.
  • Mix all of the cake ingredients together. Make the topping before pouring it into the pan.
    1 3/4 cups sugar, 2 1/2 cups flour, 1/4 cup cocoa, 2 teaspoons cinnamon, 1/2 – 1 teaspoon baking soda, 1/2 – 1 teaspoon baking powder, 1 teaspoon salt, 1 cup oil, 1/2 cup milk, 2 eggs, 1 teaspoon vanilla, 2 cups zucchini, shredded
  • Mix the topping ingredients together in a medium bowl. Add half to the cake batter, mix well, and pour the batter into the prepared pan. Sprinkle with the remaining topping.
    1 cup chocolate chips, 3/4 cup chopped nuts, 3/4 cup brown sugar
  • Bake the cake at 350 for 35 – 40 minutes.
