Instant Pot Creamy White Chili

This recipe wasn’t difficult to begin with, but I thought I’d made it even easier by adapting it for the Instant Pot. Creamy white chili was an instant success with my family, and that’s hard thing to accomplish with 7 of us!

Heat the Instant Pot on “saute” mode. Saute until slightly browned around the edges:

1 T. oil

1 1/2 lbs. boneless, skinless chicken thighs, cubed

a medium onion, chopped

1 1/2 t. garlic powder (Sprinkle over everything.)

Add the following ingredients:

3 cans Great Northern beans, rinsed and drained

2 c. chicken broth

4 oz. canned green chilies

1 t. salt

1 t. oregano

1/2 t. pepper

Cook on high pressure for 7 minutes, then quick release. Stir in and heat through:

1 c. sour cream

1/2 c. milk

Serve creamy white chili with your favorite cornbread or bread. Chips or crackers crumbled on the top would be good too.

I found this interesting article that explains the different types of chilis. I’m not a purist when it comes to recipes; I’ll eat it if it tastes good. I don’t care if it meets the specifications for a certain cuisine or diet.

Ingredients
  

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 onion medium, chopped
  • 1 1/2 teaspoons garlic powder
  • 1 tablespoon oil
  • 3 cans Great Northern beans rinsed and drained
  • 2 cups chicken broth
  • 4 ounces green chilies
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1 cup sour cream
  • 1/2 cup milk

Instructions
 

  • Heat the Instant Pot on saute mode. Saute the chicken, onion, oil, and garlic powder until lightly browned around the edges.

  • Add the beans, broth, and spices. Cook on high pressure for 7 minutes with a quick release.
    3 cans Great Northern beans, 2 cups chicken broth, 4 ounces green chilies, 1 teaspoon salt, 1 teaspoon oregano, 1/2 teaspoon pepper
  • Stir in the sour cream and milk and heat through. Serve with bread or cornbread.
    1 cup sour cream, 1/2 cup milk
